Most fried okra recipes seasoned only with salt and sometimes pepper. This recipe has a nice bite to it and is often served with warm dipping sauces such as Chunky tomato and spicy cheese. Whether this is a 'true' Cajun recipe is Questionable. Enjoy
Ingredients
- 8 oz. okra
- 1/2 cup yellow cornmeal
- 1/2 tsp. paprika
- 1/4 tsp. ground red pepper
- 1/4 tsp. salt
- 5 drops hot pepper sauce (optional)
- 1 egg + 1 TB. water
- Vegetable oil for frying
Directions
In a 4 quart saucepan, using deep-fry thermometer, heat 2-inches oil to 365*F.
Meanwhile, slice stems and tips from okra. In a medium bowl, combine next 5 ingredients. In a small dish, beat together egg and 1 Tb. water. Dip okra into egg, roll in cornmeal mixture and fry in small batches. Fry okra until golden brown, about 1 1/2 minutes. With slotted spoon, remove to paper towel to drain. serve immediately.
