Suggested quick topping-Glazed blueberries or blueberry pie filling. The tuna cans are the perfect size and shape for a true miniature single- serving cheese cake. There are many, many variations on this recipe some baked, others not.

Ingredients

  • Crust
  • 4 3" pans (Save your Tuna cans! They work wonderfully well!!I keep a dozen on hand.)
  • 1/3 stick margarine
  • 1 cup vanilla wafer crumbs
  • Batter
  • 1 envelope unflavored gelatin
  • 1/4 cup warm water
  • 1 8 oz. package cream cheese
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1 Tbl. lemon juice
  • 3/4 cup blueberry pie filling

Directions

Thinly spread bottom and sides of pans with margarine. Evenly coat bottom and sides of pans with crumbs and press into place. Add additional crumbs to the bottom of each pan so the cakes can be easily removed when chilled. Save remaining crumbs for next use. Refrigerate pans while preparing batter.

Soften gelatin in warm water for 5 minutes. Stir until dissolved. Mix gelatin, cream cheese, sugar, and sour cream. Add remaining ingredients to cream cheese mixture, continuing to mix until well blended.
Pour equal portions of batter in pans and chill until firm.
Carefully run a smooth knife around the inside edges of each pan to loosen Refrigerator Baby Cakes. Invert on a saucer, then on to dessert plate, crumb side down.
