Ingredients
- 2-3 lb. bottom round roast
- 1/2 cup dark rum
- 1-2 by leaves
- 4-5 whole black pepper corns
- 1 tblspn prepared horseradish
- 1 tblspn each salt & sugar
- 1 stick butter or margarine
- 1-2 cloves garlic
Directions
Sprinkle meat with salt and sugar(1 tablespoon each). Melt butter in heavy duty covered pot. Add garlic and brown. Remove garlic. Brown meat on all sides - over medium heat. Should take at least 1/2 hour. Remove meat. In a glass bowl, mix run, horseradish, peppercorns and bay leaves. Add the drippings from the meat- be careful- it's hot and it will pop! Place meat on rack and add just enough water to come up to the bottom of meat. Add rum mixture to water in pot and bring to a boil. Reduce heat and simmer at least 2 hours. After 2 hours, add cut carrots and a small onion. After 30 minutes, remove meat and veggies. Keep warm. Mix 2 cups Bisquick with milk (follow directions on side to make dumplings). Make dumplings in same pot as you cooked the meat. Serve dumplings, veggies, and meat - one meal - one pot!
