The cake is better made 24 hours in advance, and therefore is an easy dessert for company. As I said, this recipe is 'made up' so hope the directions make sense. If not, let me know at joclibb@ycs.ab.ca

- 1 hot milk sponge cake, cut in half
- 1 lb cream cheese
- 3 eggs
- sugar to taste
- strong coffee (expresso)
Directions
This is a recipe I put together in desperation, and has gone over quite well. I have used both chocolate sponge cake and white - actually, half and half is very good. I also make the cake from scratch, so if you don't have a recipe for it, please let me know.
Beat the egg yolks till light yellow, add the cream cheese and sugar and beat very well. Add beaten egg whites to this mixture and fold in with about 4 T of strong coffee.Sprinkle about 1/8 to 1/4 cup of strong coffee over the split cake (split between the two halves) Spread half the mixture over one half of cake, place the top on, then the remainder of the cheese mixture. Sprinkle generously with dry, unsweetened cocoa powder.
