Ingredients
- 2 cups sifted flour
- 1 1/2 tsps. baking soda
- 1/2 tsp.salt
- 1 Tbls. sugar
- 2 eggs
- 2 cups sour milk or buttermilk
- 1 1/2 Tbls. melted butter
Directions
Sift flour, soda, salt, and sugar together. Beat eggs until light, add milk, then gradually add to flour mixture. Beat until smooth and free from lumps and add melted butter. Pour batter into a pitcher. Heat and grease a griddle. Pour in enough batter to make a cake about 5-inches in diameter. Cook until brown underneath, turn and brown on other side.
To make sour milk:
Measure 1 Tbls. vinegar or lemon juice into a measuring cup. Add sweet milk up to the one cup level and stir well.
(the process of pasteurization prevents milk from souring naturally as raw milk did in Grandma's day). Enjoy!!
