Ingredients

  • 2 cups sugar
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2/3 cup cocoa
  • 1 cup milk
  • 1/2 cup oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon red food coloring
  • 1 cup coffee
  • 1 tub of chocolate frosting and chocolate fudge

Directions

1. Mix all the dry ingredients together.

2. Add the milk, oil, eggs, vanilla and coloring. Mix well, ensuring there are no lumps etc. Add the cupful of coffee.

3. Using an electric mixer on a slow speed, mix again thoroughly.

4. Grease two 9 inch round cake tins with shortening and dust with
flower.

5. Add the well mixed ingredients from number 3 above to the cake tins in two equal amounts.

6. Bake in a preheated oven at 375 degrees for about 35 minutes. Check that it is well cooked before removing from the oven.

7. Once removed, allow the mix to cool completely.

8. After the cakes have cooled, remove both on to plates. If the cakes stick a little, loosen at the sides with a knife.

9. One side which will be the base of your finished cake should be covered with chocolate frosting. After this is finished,
put the top half on and frost the rest.

10. If you want to increase the 'fat' value of the above, you can add a small tub of full cream between the top and bottom layers.
