Ingredients
- 2 squares semi-sweet chocolate
- 1 1/2 tablespoons margarine
- 2 teaspoons beaten egg (can be omitted-just add a bit more jam)
- 1 cup sifted icing sugar
- 4 digestive biscuits-crushed (about 1/2 cup crumbs)
- 2 tablespoons walnut crumbs or coconut
- 2 teaspoons jam--apricot or sieved raspberry
- 1 tablespoon sherry, brandy or rum (or 1 tsp. vanilla)
Directions
In a bowl large enough to hold all the ingredients, melt the chocolate and margarine in the microwave. Add the egg and let cool. Add the rest of the ingredients in the order given and mix with a fork. Let stand for a little while (to let the moisture be absorbed by the crumbs). Roll teaspoonfuls of mixture into balls and then roll in icing sugar, cocoa, coconut or finely chopped walnuts. Store in fridge. You can also roll the mixture around well drained maraschino cherries or whole nuts.
