Ingredients

  • 6 eggs
  • 1 1/2 cups flour
  • 1 1/2 cups milk
  • 1 1/4 cups half and half
  • 1 teaspoon vanilla
  • 1/4 cup light vegetable oil
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • diced Granny Smith apples, about 1/3 cup for each pancake

Directions

Preheat oven to 450 degrees. Combine dry ingredients in a mixing bowl. Add milk, vanilla and half and half. Mix on medium speed approximately 6 minutes or until smooth. Slowly add eggs and then oil. Heat 2 tablespoons oil in a 12"" saute pan over medium high heat. Add 1 cup of batter and 1/3 cup apples. Cook pancakes, lifting edges so uncooked batter runs under. Turn pancakes over while still wet on surface and finish cooking in oven, about 6 minutes. Turn out onto plate and sprinkle with cinnamon sugar. (I found it difficult to turn the pancakes in a 12 inch pan, so switched to a 10 inch pan and used 3/4 cup of batter for each pancake. (My friend who picked up the recipe for me in Seattle, says they also have a version using blueberries instead of apples.
