Ingredients

  • 1 package fresh skinless Chicken Drumsticks (substitute skin-on drumsticks if preferred)
  • 1 egg
  • 3 tbs. BBQ Sauce
  • 1/2 cup cornflakes crumbs or plain bread crumbs
  • 1/4 cup flour
  • 1/2 tsp. salt
  • Nonstick cooking spray

Directions

Preheat oven to 375 degrees. Cover baking sheet with alu foil and spray with nonstick cooking spray. In a small bowl, blend egg and BBQ Sauce. Place cornflakes or bread crumbs in another bowl. In reclosable plastic bag, combine flour and salt; shake to mix. Place chicken pieces in bag, one or two at a time and shake to coat. Dip each drumstick in egg, and then roll in crumbs. Place chicken on baking sheet. Bake chicken for 15 - 20 minutes. Turn pieces over and bake another 15 to 20 minutes more or until internal juices run clear. (Or insert instant-read meat thermometer in thickest part of chicken. Temperature should read 180 degrees.) Serve with corn and fresh fruit if desired. Refrigerate leftovers immediately.
