Ingredients

  • 3-4 pound roast
  • Montreal steak seasoning
  • salt & pepper
  • 2 garlic cloves
  • 3 Tbs cooking oil
  • 1 cup beef broth
  • 4 potatoes cut in 1 inch cubes
  • 4 carrots sliced 1/2" thick

Directions

Poke holes is roast and insert garlic sliver in each hole. Coat roast liberally with seasoning, pressing it in on both sides. In skillet brown roast in hot cooking oil. Brown on all sides. In crock pot layer half of potaoes and carrots in bottom of pot sprinkle lightly with some salt and pepper. Place browned roast on top of vegetables and add remaining carrots and potatoes, sprinkle remaining salt and pepper. Add cup of beef stock, cover and close, cook on low for 9-10 hours until done. Remove roast and vegetables, cover with foil to keep warm. Pour juices from crock pot into skillet and add flour and stir to make gravy.
