Ingredients

  • 3 cups milk
  • pared rind of 1 lemon
  • 1 cinnamom stick
  • 4 eggs
  • 4 egg yolks
  • 3/4 cup sugar
  • For caramel:
  • 3/4 cup sugar
  • 1/3 cup water

Directions

Preheat oven to 350 F.
Use a souffle or baking dish about 5 cup capacity.
Scald milk with the lemon rind and cinnamon stick and let stand in a warm place for 15 minutes.

Caramel:
Heat the sugar in the water until it is dissolved, then boil without stirring until golden brown. Remove from heat and pour into the dish. Tilt back and forth to cover the bottom and sides of dish.

Custard:
Beat the eggs and the egg yolks with the sugar until thoroughly mixed, and stir in the hot milk. Strain into the caramel lined dish and set it into a water bath.
Bake for 40 to 50 minutes or until knife comes out of center clean. Let cool in dish.
Before serving, loosen sides with a knife and flip onto a platter with a rim. It can also be made in individual custard cups. Large is better if you love it like I do.
