• 1/2 tsp. grated lime zest
  • 2 cups diced pineapple
  • 3 tbs. fresh lime juice
  • 2 kiwi diced
  • 2 TBS reduced sodium soy sauce
  • 2 TBS honey
  • 2 tsp. light brown sugar
  • 2 TBS diced cilantro
  • 1 LB large shrimp shelled and deveined
  • 1 pinch cayenne pepper
  • 1 diced papaya


Stir together zest, 1 1/2 TBS lime juice, soy sauce, brown sugar, pinch of cayenne pepper. Let marinate 20 minutes. In another bowl prepare relish by mixing pineapple, kiwi, honey, cilantro and remaining lime juice. Turn oven on broil. Place shrimp on broiler pan on middle rack of oven. Drizzle marinade over top. Cook until done. On four cold plates, spoon out relish, place shrimp on top. Garnish with diced papaya.
