Ingredients

  • 1 cup water
  • 1/2 cup of butter
  • 1 cup of all-purpose flour, unsiffed
  • pinch of salt
  • 4 large eggs
  • Chocolate sauce:
  • 2 squares ofunsweetened baking chocolate
  • 2 tablespoons of sweet butter
  • 1 cup sugar
  • 1/4 tsp salt
  • 3/4 heavy cream
  • dash of vanilla

Directions

Heat water,butter and salt. Bring to rolling boil.Add flour all at once. Stir vigously for 1 minute,or until it forms a ball. Remove from heat and add eggs, one at a time, beating well after each addition, until velvety.Drop by scant 1/4 cupfuls onto ungreased cookie sheet. Bake at 400 for 35-40 minutes until golden brown.Remove slice of the top and all filaments of dough inside. Cool.

Chocolate sauce: Melt chocolate and butter, over very low heat.Stir until smooth. Add cream and blend well. Cook until ready to boil stirring constantly. Remove from heat, add vanilla.Serve warm.( makes 2 cups of sauce)

Fill puffs with whipped cream (the French way) or vanilla ice cream, also very good. Put covers back and cover with hot sauce.
