I guess it's too late to make this for tonight's dinner, but maybe the next time you have pork loin!

Ingredients

  • 1 3-lb. rolled pork loin roast
  • 1 10-oz jar apple jelly
  • 1/4 cup soy sauce
  • 2 TBS salad oil
  • 2 TBS lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp ginger

Directions

Place roast in a glass baking dish. Combine remaining ingredients in a saucepan and cook over low heat until jelly is melted. Remove from heat. Pour sauce over and refrigerate 3 hours, turning meat several times. Remove from sauce and roast in preheated oven at 350 degrees for two hours, or until meat thermometer inserted in the center of roast registers 170 degrees. During roasting, brush meat a few times with sauce. Let stand 10 minutes before serving.


Makes six servings.
