You can substitute zucchini for the green pepper or mushrooms. I even put Large cut onion on the skewers, but they don';t do well...they slide off too easily...but they are good when you can keep them on.

Ingredients

  • 1 lb. boneless beef sirloin cut into cubes
  • Large whole fresh mushrooms
  • Green pepper squares
  • 2 ears of corn, cut in 1-inch slices
  • Cherry tomatoes
  • Marinade:
  • 1 cup cream sherry
  • 1/2 cup vinegar
  • 2 tsp. teriyaki sauce
  • 1 TBS. Worcestershire sauce
  • 1 clove of garlic, minced

Directions

Mix all the ingredients of the marinade together. (I tenderize the beef before I cut it in Adolph's, but that's up to you) In a glass or plastic container, put the beef and pour the marinade over it. Allow to marinade at least three hours, turning the meat once after an hour and a half. (I marinade it overnight).

Alternate meat and vegetables on the skewers. I like to serve small, boiled potatoes covered with butter and parsley when not in the mood for rice. Broil on a broiler pan, or grill until the meat is done as you like it.
