Ingredients

  • 1 BOX DUNCAN HINES YELLOW CAKE MIX
  • 3 PACKAGES OF ( 3.4 OZ EACH ) INSTANT VANILLA PUDDING MIX
  • 4 CUPS COLD MILK
  • 1 1/2 TEASPOON COCONUT EXTRACT
  • 1 ( 20 OZ. ) CAN OF CRUSHED PINEAPPLE, WELL DRAINED
  • LARGE COOL WHIP THAWED
  • 2 CUPS TOASTED FLAKED COCONUT
  • 1 ( 8 OZ.) PACKAGE SOFTENED CREAM CHEESE

Directions

MIX CAKE ACCORDING TO PACKAGE DIRECTIONS.

POUR INTO 2 ( 9 X 13" ) BAKING PANS. BAKE AT 350 FOR 15 MINUTES OR TILL CAKE TESTS DONE. COOL COMPLETELY.

IN A LARGE MIXING BOWL, COMBINE THE PUDDING MIXES, MILK AND COCONUT EXTRACT. BEAT FOR 2 MINUTES, AND ADD THE CREAM CHEESE AND BEAT TILL COMBINED. STIR IN DRAINED PINEAPPLES.SPREAD OVER THE COOLED CAKES.

TOP WITH COOL WHIP AND SPRINKLE WITH TOASTED COCONUT, REPEAT THE LAYERS AGAIN.

CHILL FOR AT LEAST 2 TO 4 HOURS BEFORE SERVING.

NOTE: CAN BE FROZEN FOR UP TO 1 MONTH
