This is a traditional french Christmas dessert.

Ingredients

  • 2 1/4 pounds of marrons (chestnuts)
  • 18 ounces (500gr) sugar
  • 1 quart (liter) water
  • 1 Vanilla bean
  • Salt

Directions

Put the marrons in a large pot of boiling salted water. Boil 20 minutes. Remove from heat. Steep another 5 minutes, drain salted water..
Remove the marrons one a a time, and peel off skin very carefully, the marrons will be soft at that point. Put back in the pot.

In another pot dissolve sugar and water add vanilla bean simmer until sirup thickens.
Pour over marrons and simmer 30 minutes. Remove from heat let sit for another 15 minutes.

Remove to a plate and serve with unsweetened whipped cream.
You can also sprinkle with Brandy, or put in a cup with some of the sirup over them.
