Ingredients

  • 1 pig trotter (whole and uncut)
  • salt
  • pepper
  • oil for frying

Directions

Slow boil the pig trotter in salted water. Simmer till the feet is tender. Gently lift out the 'feet', and strain making sure that the skin is intact. Salt and pepper the 'feet. 'Dry' in the oven set for very low or place in freezer. In a deep pot, place some frying oil and gently lower the pig feet in the oil. Make sure the oil is not hot yet when you put the feet otherwise it will be exploding all over your kitchen. Slow frying is what i call it. Fry till crispy brown.

We usually dip it in vinegar with soy sauce, garlic and pepper.

Yummy with beer.
