Ingredients

  • 4-6 pig's feet
  • 2-3 white potatoes
  • 2 onions
  • 1 rib celery
  • 2 tbsp cider vinegar
  • 2 cloves garlic, crushed
  • 1 tsp salt
  • 2 tbsp picklig spice
  • 2 hot red pepper pods
  • 1 tsp black peppercorns
  • 1 bay leaf
  • 1/2 tsp mustard seed
  • Cheese cloth

Directions

1. Wash feet. Place in stockpot. Cover with water. Parboil 8 minutes. Remove feet. Rinse. Pour out water. Return feet to pan. Cover with water. Repeat parboil procedure.

2. Place feet in stockpot. Cover with fresh water. Add potatoes, onions, celery, vinegar, garlic and salt.

3. Make spice bag by placing pickling spice, red peppers, peppercorns, bay leaf and mustard seed on piece of cheese cloth. Pull up sides to form a pouch. Secure at top with string. Add to stockpot. Bring to a boil. Reduce temperature. Simmer 2 hours or until tender.
