Ingredients

  • 1 cup butter at room temperature (temperature is essential)
  • 1 whole egg
  • 3 egg yolks
  • 1/2 cup granulated sugar
  • 1/4 teaspoon almond flavoring
  • 1 tablespoon grated orange rind
  • 1/3 teaspoon baking powder
  • 1 3/4 cups sifted all-purpose flour
  • 1/4 cup ground almonds
  • 3 tablespoons orange juice

Directions

1. Preheat the oven to 375 degrees.

2. Cream together the butter, whole egg, two of the egg yolks, sugar and almond flavoring. Stir in the orange rind.

3. Sift together the flour and baking powder. Fold the flour mixure into the dough, then fold in one tablespoon of the orange juice.

4. Spoon the dough into a well-buttered nine-inch layer pan and brush the top with the remaining egg yolk beaten with the remaining orange juice. Bake twenty-five to thirty minutes. Wrap in foil and keep twenty-four hours before serving.
