Ingredients

  • 1 cup raisins
  • Hot water
  • 1 cup cream or whole milk
  • 1 cup sugar
  • 2 tablespoons flour
  • 1/4 teaspoon cinnamon
  • Grated rind of 1 lemon or 1/4 teaspoon lemon extract
  • 2 egg yolks
  • Baked 9" pie shell

Directions

Cover raisins with hot water, stew until tender and thick. Drain, add cream to raisins. Mix sugar, flour, cinnamon, grated lemon rind and add to raisins. Cook slowly for five minutes. Stir in beaten egg yolks and cook a few minutes longer, until mixture is well thickened. Pour into baked pie shell. Bake for about 30 minutes in 325 F oven.
