Ingredients
- (Baked Macaroni with Beef and Cheese)
- 2 cups elbow macaroni
- 1 1/2 pounds ground beef
- 1 small onion, chopped
- 1 can(8 oz.)tomato paste
- 1/3 cup water
- 2 teaspoons salt
- 1/4 cup grated hard cheese(kefalotiri, Parmesan or Romano)
- 1 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground cinnamon
- 2 1/3 cups milk
- 1/3 cup butter or margarine
- 4 eggs, beaten
Directions
1. Cook macaroni according to package directions; drain and set aside. Cook and stir meat and onion in large skillet until meat is brown and onion is tender. Stir in tomato paste, water and 2 teaspoons salt; set aside.
2. Heat oven to 325 degrees F. Mix cheese, 1 teaspoon salt, the nutmeg and cinnamon. Spread half of the macaroni in greased baking dish, 13 1/2 x 9 x 2 inches. Cover macaroni with meat mixture. Sprinkle cheese-spice mixture on meat; cover with remaining macaroni.
3. Measure milk and butter into 2-quart saucepan.
Cook and stir until butter is melted. Remove from
heat. Gradually stir at least half of hot milk mixture into beaten eggs; mix into hot milk mixture in pan. Pour on macaroni.
4. Bake until bubbly, about 55 minutes. Garnish with parsley if desired
