Ingredients

  • 1 nine inch pie
  • 4 cups blue grapes
  • 3/4 cup sugar
  • 1 1/2 tablespoons lemon juice
  • 1 tablespoon grated orange rind
  • 1 tablespoon quick cooking tapioca
  • Pie Crust

Directions

Stem the grapes. Slip the pulp out of the skins. Remove the skins. Cook the pulp until the seeds loosen. Press it through a colander to remove the seeds. Combine the pulp, the skins and the rest of the ingredients. Permit these ingredients to stand for five minutes.

Prepare crust.

Line a 9-inch pie pan with the pastry.Fill it with grape mixture. Place a lattice of pastry over the top. Moisten the edges of the bottom crust. Place a long strip of pastry around the edge of the pie. Crimp it down with a fork. Bake the pie in a hot oven 450 degrees F. for 10 minutes; lower the heat and bake it in a moderate oven 350 degrees F. for 20 minutes longer
