Ingredients

  • 6 rib pork chops, 1 inch thick (2 1/2 lbs)
  • 1 1/2 tsp sage
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 pound carrots, pared
  • 2 cups sliced onions
  • 1 lb. tart cooking apples, pared and quartered
  • 1/4 cup light-brown sugar

Directions

Preheat the oven to 350 F.
Wipe the pork chops with a damp paper towel. Trim off the fat if necessary. On waxed paper, combine sage, salt and pepper. Dip both sides of the chops in the seasoning.
Slice the carrots diagonally 1/2 inch thick. Layer them in a 3 quart casserole or baking dish. Top with half of the onions. Then add the chops, lightly overlapping and sprinkle with any remaining seasoning. Cover the chops with the remaining onions. Arrange the apple quarters over all and sprinkle with the brown sugar. Bake covered for 2 hours. Remove the cover and baste with the pan juices.
Bake for 30 minutes longer or until they are tender.
Let stand for 5 minutes and then skim off the fat.
