Ingredients
- 3/4 cup butter, softened
- 2/3 cup packed brown sugar
- 2 eggs
- 1-1/2 tsp. vanilla
- 1 cup Solid Pack Pumpkin
- 2 cups flour
- 2-1/2 tsp. pumpkin pie spice
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/8 tsp. salt
- 1 cup chopped pecans or walnuts
- 1/2 cup raisins
- BUTTER CREAM FROSTING
- 1/2 cup butter, melted
- 3-1/2 cups confectioners' sugar
- 1-1/2 tsp. vanilla
- 4-5 tsp. hot water
Directions
1. In large bowl, cream butter and sugar; beat in eggs and vanilla. Stir in pumpkin.
2. In small bowl, combine flour, baking soda, baking powder, salt and pumpkin pie spice. Gradually add to creamed mixture. Stir in pecans and raisins.
3. Drop dough by rounded teaspoonfuls onto ungreased cookie sheets.
4. Bake in preheated 375: oven for 10-12 minutes. Cool on pan 1 minute; cool completely on wire racks.
5. For frosting: blend together butter, sugar and vanilla. Gradually add hot water, 1 teaspoon at a time, until desired consistency is reached. Spread over cooled cookies.
