This is the recipe I use when making custard puffs, this is easy and this recipe "puffs" very nicely!


  • 1 Cup Water
  • 1/2 Cup Butter
  • 1 Cup Sifted Flour
  • 4 Eggs
  • 1/4 teaspoon Salt


In sauce pan heat water and butter to boil. Stir flour into pan and stir till mixture forms into a ball and pulls away from sides of pan. (This should take about a minute) Add eggs, one at a time, beating till smooth after each addition; From tablespoon, drop mixture onto ungreased baking sheet. In preheated 4oo degrees oven, bake 45 to 50 minutes until shells are puffed and dry. When throughly cool, cut off tops and fill with your choice of fillings.

Makes 10 to 12 puffed shells
