Ingredients

  • 2 cups sifted flour
  • 1/4 tsp.salt
  • 1/4 cup fruit sugar
  • 1/3 cup butter
  • 1/3 cup shortening
  • 2 eggs yolks
  • 4 tsps orange or lemom juice
  • 2 tsps cold water

Directions

Mix together flour, sugar and salt.Blend in butter and shortening. Beat egg yolks with juice and water. Stir liquids in flour mixture. Turn out on a lightly floured pastry cloth, and press crumbly mixture into a ball. Knead lightly and roll out.Cut and fit in pans.Prick and cook for 15-20 minutes in a 375-400 degrees oven. This is a very rich pastry and I am not sure it is suitable for 2 crusts pies. My mother always filled the tarts with already cooked apples that were not at the sauce stage, but nice and a little firm still.
