Ingredients
- 2 cups sourdough starter
- 4 tablespoons oil
- 1 egg
- 2 tablespoons sugar
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 tablespoon warm water
Directions
In a medium bowl add the oil, egg, sugar and salt to the sourdough starter and mix well. When you are ready to pour batter on the griddle, dilute the baking soda in the water.
Fold gently into the batter - do not beat!. Bake on hot griddle until lightly brown. Serve hot with maple syrup.
Variations:
Blueberry Pancakes - To the above recipe add:
1 cup blueberries
3 Tablespoons granulated sugar
Fold gently into the batter JUST BEFORE adding the baking soda. Bake until blueberries are thoroughly cooked on both sides.
Apple Pancakes - To the above recipe add:
1 cup finely diced apples
3 Tablespoons brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Fold gently into the batter JUST BEFORE adding the baking soda. Bake until apples are thoroughly cooked on both sides.
