Cilantro has to be fresh. Serve with white rice. If you like thinner soup, add more chicken broth.
- 4 cups canned whole black beans
- 2 cups chicken broth
- 1/2 cup chopped fresh cilantro
- 1 cup chopped tomatoes
- 1/2 cup chopped onions
- 2 tablespoons olive oil
- salt to taste
Set aside 1/2 cup beans for garnish. In blender mix beans with chicken broth about 3 minutes. In a deep saucepan combine olive oil, onions and tomatoes, cook for 2 minutes. Add bean mixture,cilantro and bring to a boil, add salt to taste Garnish with crutons, beans and sourcream.
