Ingredients

  • 3 cups corn meal
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/4 cup finely chopped green onion
  • Cocktail sauce, honey, ketchup, cheese sauce or other favorite dipping sauce

Directions

1. Mix together all the ingredients.

2. Fill a frying pan 1 to 1 1/2 inches deep with cooking oil. Heat the oil on medium-high until a drop of water makes a splattering sound when you sprinkle it in.

3. Using your hands, form the corn meal mixture into sticks, about 1/2-inch square and 4 inches long, dropping each stick into the hot oil once it's formed. The mixture will be semi-crumbly, so you'll have to work quickly to get each stick into the oil before it falls apart, being careful not to splatter the hot oil. If you're having trouble, you can also form the mixture into balls and/or lower it into the oil using a slotted spoon or spatula.

4. Cook 3 to 4 minutes to an even golden-brown, turning if necessary. Remove to a plate of paper towels to absorb excess oil. Serve hot with your favorite sauce.

Variation: Add 2 tablespoons of grated Parmesan cheese, 1 tablespoon chopped green chilies or 1 tablespoon finely chopped roasted red pepper to the corn meal mixture.

Note: If you want to make the hush puppies a little ahead of time, or if you're making more than will fit into your frying pan, keep the cooked ones warm in a 200-250 degree F oven until you're ready to serve.
