Ingredients

  • 4 boneless chicken breasts
  • 1/4 C. chicken broth
  • 1-2 Tbsp capers rinsed
  • 1 Tbsp. lemon juice
  • 2-3 tsp. butter
  • Salt and pepper to taste

Directions

Saute the chicken in olive oil until cooked and browned.
Transfer it to a plate and set aside, covered to keep warm.
In a small bowl, stir together the chicken broth, capers, and lemon juice. Add to the skillet and bring just to a boil, stirring to scrape any cooked bits from the bottom of the skillet. Remove from the heat, stir in the butter and season to taste with salt and pepper. Pour over chicken and serve.
