• Spices:
  • 2 tsp Curry
  • 1 tsp Cayenne
  • 6 cloves garlic or equivalent garlic powder
  • 1 tsp Paprika
  • Optional - 1/2 tsp sesame seed oil.
  • Veggies:
  • 1/2 medium yellow onion, chopped
  • 5 chopped green oninons, set aside
  • Meat:
  • 2 lbs. chicken thighs, whole, with skin on
  • Canned goods:
  • 1 15 oz. can chicken stock, unsalted
  • 1 can Campbell's Cream of Celery soup
  • 1 can Campbell's Cream of Mushroom soup


Put all the canned goods and chicken into a large saucepan and heat slowly to a boil. Break up the soup clumps but don't bruise the mushrooms!
Add the spices and yellow onions to the pot, bring slowly to a boil, then simmer until it is all eaten. Add the green onions just minutes before serving. Total cooking time is around 45 minutes to one hour.
Cook up some rice ahead of time and serve the sauce and chicken over rice in a bowl.

Curried Chicken
