• 1 tbsp. balsamic or red wine vinegar
  • 1 tsp. chopped fresh sage or 1/2 tsp. rubbed dry sage
  • 1 tsp. packed brown sugar
  • pinch of garlic powder
  • 4 1-inch thick loin lamb chops
  • salt and pepper to taste


In a 9-inch glass pie plate, mix vinegar, sage, sugar and garlic powder. Add chops and marinate them at room temperature for 30 minutes, turning occasionally. Salt and pepper chops as desired. Arrange chops so that fat layer is toward the outside and the bony edges are in the center of the dish. Turning the chops once and rotating the dish midway through cooking, microwave on medium-high (70%) 3-5 minutes or until chops are pink in the center. Cover with foil and let stand for 3 minutes. Serves 2
