Ingredients

  • 6 slices of thin cut chicken breast cutlets
  • 1/4 pound boiled ham (smoked)
  • 1/4 pound swiss cheese
  • flour
  • eggs
  • bread crumbs
  • Oil for frying
  • 1 Tbl. margarine

Directions

Lay cutlets on table. Put strips of ham and cheese on each cutlet, then roll them up tight and secure with toothpicks.

Using three bowls (one eggs, one flour and one bread crumbs), roll the cutlets in flour, then egg, then bread crumbs.

Heat oil in pan. Fry rolled cutlets until browned. Add 2 Tbl. water and 1 Tbl. margarine to pan. Simmer for 30 minutes covered, turning half way through.

Take cover off for last 5 minutes of cooking.
