Ingredients

  • 2 lb. spareribs
  • boiling water
  • 1/2 tsp. garlic powder
  • 4 peppercorns
  • 1 tsp. salt
  • 2 tsp. parsley flakes
  • 1 slice of onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 cup apple jelly
  • 1 tsp. lemon juice
  • 1-1/2 tsp. Worcestershire sauce
  • Dash Tabasco sauce
  • 1 tsp. dry mustard

Directions

Cut ribs into 3-rib sections. Put them in a large kettle
and cover with boiling water. Add garlic powder, peppercorns,1 tsp. salt, parsley flakes and slice of onion. Bring to a boil, turn down heat, cover and simmer 30 minutes. Lift out of water and drain. Combine apple jelly, lemon juice, Worcestershire sauce, Tabasco sauce and mustard in a small pan and set on back of grill to heat and blend. Sprinkle ribs with 1 tsp. salt and 1/4 tsp. pepper. Brush ribs with apple jelly mixture and cook over hot coals. Cook 10 minutes. Brush well with apple jelly mixture, turn and cook about 10 minutes. Continue cooking, brushing with jelly mixture and turning often until very well browned and crisp, about 10 minutes longer.
