Ingredients

  • Skin and pulp of medium pineapple
  • 2 limes
  • 1 qt boiling water
  • 1 root ginger
  • 2 cups sugar

Directions

1. Put skin and pulp of pineapple in large bowl.
2. Add thinly sliced limes and crushed ginger.
3. Add boiling water.
4. Cover and let stand for about 2 days.
5. Skin, strain and sweeten.
6. Chill and serve.
