Ingredients

  • 1 whole chicken
  • 6-8 garlic cloves
  • dried herbs - oregano, parsley etc.
  • quality french dijon mustard
  • water
  • 2-3 medium sized yams cut in big chunks
  • 4-5 regular potatoes '' '' '' ''
  • 1 large onion '' '' '' ''
  • few carrottes '' '' '' ''

Directions

Place chicken in a large roasting pan. make insitions in the legs, breast etc. and stick in the peeled garlic cloves. Rub some of the mustard and herbs on it, pour a little water in the pan and pop it into the oven at about 350. Depending on how big your chook is, throw in the cut up vegetables about 1 hour before it's done and baste it once in a while with the succulent juices in the pan. If you don't wan't the skin too roasted, cover your bird with some tin foil for the first wave of cooking and remove it when you add the veggies.
Sit back, enjoy the aroma, make a salad, have a glass of wine, munch on some baguette and wait for your friends to show up!
