Ingredients
- 2 cups water
- 1 cup sugar
- 2 cups fresh lemon juice
- 1 lemon rind -- grated
- 2 egg whites
Directions
1. Make a simple syrup by combining 1 cup sugar and 2 cups water. Bring to a boil and boil for 5 minutes or until sugar is completely dissolved. Cool.
2. Pour lemon juice, grated lemon rind and syrup into ice cream freezer (electric works best for this dessert). Following manufacturer's directions, freeze for 15 minutes, then check; mixture should be slushy.
3. Add egg whites that have been beaten into soft peaks. Freeze for another 15 minutes. When ready, the lemon ice will be a bit soft.
Makes 1 quart.
