• 1/3 cup dry bread crumbs
  • 2 Tbs. grated Parmesan cheese
  • 3/4 tsp. Italian herb seasoning
  • 1/2 tsp. garlic powder
  • 1 lb. boneless skinless chicken breast halves
  • 1 egg, beaten
  • 1 cup tomato sauce
  • 3/4 cup shredded mozzarella cheese


Preheat oven to 375F. Combine first 4 ingredients in shallow bowl. Dip each chicken breast in beaten egg, then roll in breadcrumb mixture to evenly coat. Place chicken on a cookie sheet or jelly-roll pan. Bake 10 minutes. Turn chicken over and bake another 10-12 minutes, or until chicken is thoroughly cooked. Spoon tomato sauce over chicken. Sprinkle cheese over top. Bake 3 minutes or until cheese is melted.
