Ingredients
- Cake:
- 2 Cups all-purpose flour
- 1 Tablespoon baking powder
- 1/2 Teaspoon salt
- 1/4 Cup vegetable oil
- 2 eggs
- 1/2 Cup skimmed milk
- 1 Teaspoon vanilla
- 1 Cup mashed ripe bananas
- 1/2 Cup chopped walnuts
- Frosting:
- 8 Oz low-calorie cream cheese
- 1/2 Cup banana yogurt
- 10 Packets Equal
- 1 Teaspoon vanilla
Directions
To make cake: Sift together dry ingredients. Blend oil, eggs, skim milk, and vanilla until smooth. Stir in bananas. Add to dry ingredients and stir just until flour is thoroughly moistened. Add walnuts, reserving a few for garnish. Pour equal amounts of batter into two 8-in. round cake pans strayed with non stick coating. Bake in preheated 350 degrees oven 20 minutes or until tooth pick inserted in center comes out clean. Remove from pans, cool completely on wire racks. Frost canke with banana cream frosting.
To make frosting: Combine cream cheese and yogurt, blend until smooth. Stir in remaining ingredients. Chill before using. Spread frosting over each layer. Makes one double layer 9 inch cake serves: 12.
