Ingredients

  • 1 - 2 lb.s red snapper
  • 1/2 c. lard (shortening)
  • 1 garlic clove, crushed
  • 3 tbsp. soy sauce
  • 1 tsp. sugar
  • 2 tbsp. tamarind pulp
  • 1 tbsp. water
  • 1 tbsp. shredded fresh gingerroot
  • 3 scallions, cut into 1" pieces
  • 2 shallots, mined & fried

Directions

Clean fish & prepare for cooking. Fry in lard until light brown. Remove & reserve. Brown garlic in the same lard. Add soy, sugar. tamarind pulp and water. Return fish to mix. Add ginger & scallions. Cool about 5 min. Place on hot serving dish & sprinkle with fried shallots. 2-4 servings.
