If necessary place a foil pan under the chicken to serve as a drip pan and maintain the indirect heat. A waterpan is not necessary but may be used.

Ingredients

  • Chicken or Cornish Hens
  • 1/2 Can Beer (Soda May be substituted for Beer, cola, lemon lime, gingerale etc)
  • any combination of your favorite spices or premixed Seasoning Salt

Directions

Preheat grill to med heat. Chicken should be cooked over indirect heat prepare grill accordingly. Rinse chicken and pat dry. Sprinkle or rub seasonings on inside and outside of chicken according to taste. Place can in cavity of chicken, remaining upright. Place chicken on grill making sure chicken remains standing upright on the side of the grill that won't be directly over the flame. Do not tuck wings back as they will rise when cooking and appear to wave at you when chicken is done. Depending on size of chicken, cooking time will be about an hour to 1-1/4 hr.

If desired brush bar-b-que sauce on chicken during last 10 minutes of cooking.
