Ingredients

  • 1 cup flour
  • 3/4 c rolled oats
  • 1 cup brown sugar
  • 1/2 cup melted butter
  • 1 t. cinnamon
  • 4 cups sliced rhubarb
  • 2 T. cornstarch
  • 1 t. vanilla
  • 1 cup sugar
  • 1 cup water
  • Pinch of salt

Directions

Mix flour, oats, brown sugar, melted butter and cinnamon together until crumbly. Pat half in greased 9x9 inch pan. Top with rhubarb. Combine in saucepan the cornstarch, vanilla, sugar, water and salt. Cook and stir until thickened. Pour cornstarch mixture over rhubarb then sprinkle with remaining crumb mixture. Bake at 350 1 hour. Serve with whipped cream or ice cream.
