Ingredients

  • 1 cup pancake mix
  • 1 cup club soda (plus a few tblsp. extra if batter is too thick)
  • salt, to taste
  • pepper, to taste

Directions

Mix all ingredients well and chill. Dip cut up vegetables in chilled batter and deep fry until golden brown.
