Ingredients
- 1 cup pancake mix
- 1 cup club soda (plus a few tblsp. extra if batter is too thick)
- salt, to taste
- pepper, to taste
Directions
Mix all ingredients well and chill. Dip cut up vegetables in chilled batter and deep fry until golden brown.
