• 2 tbs white vinegar
  • 2 tbs olive oil
  • 2 cloves garlic, crushed
  • 2 tbs soy sauce
  • 2 tbs honey
  • 2 tbs tomato puree
  • 2 tsp finely chopped fresh thyme
  • 4 chicken breasts or portions


In a large bowl whisk together the marinade ingredients. Pour into a container or jar and seal. Refrigerate until required. This marinade will keep for up to 1 week chilled. To use, coat chicken with marinade and stand for 30 minutes. Remove chicken from marinade and bake at 180 C until cooked and the juices run clear. Broil or grill.
