Ingredients

  • 1 c. shrimp, peeled and deveined
  • 1/2 lb. hot pork sausage
  • 1/2 lb. ham, chopped
  • 1 tbslp. oil
  • 1 tblsp. flour
  • 1 tlbsp. minced parsley
  • 1 tsp. Worcestershire sauce
  • 1 c. uncooked rice
  • 1 sliced onion
  • 1 clove garlic, crushed
  • 1 green pepper, chopped
  • salt, pepper, and paprika to tatse
  • 4 c. water
  • 1 can tomatoes

Directions

Brown sausage; drain and set aside. Heat oil. Add flour and stir until smooth and light brown. Add shrimp, sausage, ham, and tomatoes, and cook about four minutes. Add onion, seasonings and water. Simmer 10 minutes, covered. Add rice and boil until tender, about 30 minutes. Keep covered during cooking. Do not stir, but it may be necessary to lift it gently from the ottom of pot from time to time to keep the rice from burning.
