Ingredients

  • 1 cup(2 sticks) margarine, softened (do not use butter)
  • 1 cup brown sugar, packed
  • 1/2 cup white sugar
  • 1 egg, separated
  • 1 1/2 teaspoons vanilla extract
  • 2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 1/2 cups pecans, chopped

Directions

Cream margarine thoroughly with sugars; add egg yolk and vanilla, mixing smooth. Sift dry ingredients together and add to creamed mixture; mix thoroughly. Press dough into a greased 15""x10"" inch jellyroll pan. Pour the unbeaten egg white in a corner of the pan; tilt pan in all directions until egg white has coated all of the dough. Pour off excess egg. Lightly press pecans into dough. Bake at 300 degrees F. for 30 minutes. Cookies may be cut in the pan while still warm
