This recipe can easily be doubled. Blanche beef for 2 min in boiling water, drain, and shred before starting recipe. This removes the extra salt contained in the beef.


  • 2 Tbs minced onion
  • 2 Tbs minced green bell pepper
  • 3 Tbs unsalted butter
  • 3/4 c. minced mushrooms
  • 3 Tbs flour
  • 1 c. milk scalded
  • 1/2c. heavy whipping cream
  • 5 oz. dried beef
  • 1/2 tsp. Worchestire sauce
  • 2 Tbs. dry sherry


In a saucepan cook the onion and green pepper in the butter over moderate heat, stirring for 2 min. or until onion and pepper are softened. Add the mushrooms and cook the mixture stirring, for 1 min. Stir in the flour and cook over mod. heat, stirring for 3 min. Remove the pan from the heat and wisk in the milk, scalded, and the cream, and cook the sauce, stirring until thickened. Stir in the beef and cook, stirring, for 1 min. Add the Worchestershire sauce, sherry, salt and pepper.

Serve over mashed potatoes or toast points
