Ingredients
- Bean Burger Mix:
- 1 cup dried red beans
- 1 cup dried navy beans
- 1 cup dried lentils
- 6 to 7 cups water
- 1/3 cup brown rice
- 1 tablespoon oil
- 1 cup small-diced onion (1 small onion)
- 2 tablespoons minced fresh garlic (6 to 7 cloves)
- 1 1/2 teaspoons dried basil
- 1 1/2 teaspoons salt
- 3/4 teaspoon freshly ground black pepper
- 1/2 cup all-purpose flour
- 2 tablespoons tamari or soy sauce
- Bean Burger:
- 1/2 cup bean burger mix
- 1 teaspoon untoasted sesame seeds
- 1 tablespoon oil
- 1 onion bun, split horizontally
- Mayonnaise or butter
- Lettuce
- 1 tomato slice
- 1 red onion slice
Directions
1. To prepare bean burger mix: Soak beans and lentils overnight in a large bowl with enough water to cover them completely.
2. The next day, drain beans, place in a large pot over high heat, and add 6 to 7 cups water. Bring to a boil, cook for 10 minutes, then cover and reduce heat to low. Simmer for about 1 hour and 15 minutes.
3. Add rice to beans, cover and continue to simmer until beans and rice are soft and tender, 45 minutes to one hour. Drain off any excess liquid and set beans aside.
4. Heat oil in a large pan over medium-high heat. When oil is hot, add onion and cook until it begins to soften. Stir in garlic, basil, salt, and pepper. Cook, stirring for two minutes, until garlic is aromatic and softened, but not beginning to brown.
5. In a large bowl, combine cooked beans, onion mixture, all-purpose flour and tamari. Using an electric mixer fitted with a pattle, mix together until somewhat pureed, about the consistency of lumpy mashed potatoes. Cover bowl and let mix set for 10 minutes to cook flour. Refrigerate until cool enough to handle. Yield: enough to make 12 bean patties.
6. To cook basic bean burger: Preheat broiler. 7. Form 1/2 cup bean mixture into a 3-inch patty. Sprinkle it lightly with sesame seeds on both sides. Heat 1 tablespoon oil in a large pan over medium-high heat. When oil is hot, cook patty until golden brown on both sides. 8. Lightly toast onion bun under broiler and spread with mayonnaise or butter. Arrange lettuce, tomato and onion on top half of bun. Set cooked patty on bottom. (Garnish as you might a hamburger.) Set on plate and serve at once, accompanied by all the usual condiments.
NOTE: Prepare through step 5 and store, tightly covered, in the refrigerator for up to 1 week, or shape into individual patties and freeze, individually wrapped, for future use.
