Ingredients

  • 1 head of cauliflower
  • olive oil
  • 1 medium onion, chopped
  • 2-3 cloves garlic, pressed
  • 1 can chopped tomatoes (approx 14 oz.)
  • black pepper, oregano, basil
  • 3/4 c bread crumbs
  • 1/2 lb sliced mozzarella cheese
  • 1/4 c grated Romano or Parmesan cheese

Directions

Trim the leaves and stem of the cauliflower and rinse well. Heat about 1 inch of water in a saucepan that is about the diameter of the cauliflower. Cook the cauliflower, stem side down, in the water until not quite tender. Place cauliflower in an oiled baking dish.
Saute the garlic and onions in about 1 t of olive oil. Add the tomatoes and spices (to taste), cook until thick and chunky. Pour the sauce over the cauliflower, pressing it onto the dome of the cauliflower so it adheres. Cover with bread crumbs and grated cheese, patting them into the sauce. Lay the sliced cheese on the top of everything.
Bake at 350 degrees until the cheese is browned. Some of the stuff will slide off the cauliflower; don't be alarmed.
